And by my meatballs I obviously mean Isa’s meatballs. I’m slowly getting there, almost to the point of trying my own recipes. But if I haven’t made zoodles or cooked with butternut squash yet, I feel I have a ways to go. I’ve had Isa’s newest cookbook “Isa Does It” for many a moon and had yet to crack it open. Keep in mind, I have MANY cookbooks, so I just hadn’t made it there yet. It was time to fix that, homies! I opened Isa’s book and what did my happy little hand land on? Tempeh meatballs and spaghetti. Um. Yes, please.
Here’s the truth: this recipe will cure what ails you. Stubbed toe? Meatballs. Diarrhea? Tomato sauce. Contact lens lost somewhere in your eyeball? For reals, that shiz is super annoying. I mean, where does it go?
Isa’s recipe is AMAZING and soooooo stupid simple. I’m a tempeh lover from way back, so I knew this would tickle my fancy. It came together in about 30-40 minutes. If you make your meatballs ahead of time, then all you have to do is boil your pasta and you win at life.
My friends LOVED this recipe. I even found myself eating the meatballs without the sauce. One addition I would make next time is to add some cooked quinoa to my meatballs, to add a little crunch. Wait, did I just make a recipe? Alright, I get it. Not yet.
